Today, we welcome Mina from Give Me Some Spice. Mina says her blog (which is packed with Indian vegetarian recipes) is aimed at people who have never cooked Indian food before. She learned everything she knows watching her dad cook! “I always tell anyone who wants to start making curries to look up some of the good blogs and start creating their own tastes by experimenting with spices and herbs,” she says. “The important thing is to enjoy cooking.” Mina has selected her top curry recipes from Foodies100 blogs – perfect to cook now that the summer sun is fading (sob!) and we seem to be getting an early autumn drawing in.

A curry a day… The UK has adopted curry as a “national dish’ and you will find a huge variation of curry recipes with clever use of locally available spices blended together to bring out the authentic taste of a curry. At the same time, a lot of the regular British dishes like cottage pie are being ‘Indianised’ with the use of spices – but that’s a story for another day.   I would like to share with you some blog posts with curry recipes that I regularly enjoy.

  • The Citrus Spice has my old-time favourite recipe for cauliflower and peas curry. This curry is also a British favourite and is on all Indian restaurants menus as Alu Gobi. Nayna’s recipe is full of flavours and healthy too as she uses a lovely blend of spices with minimum amount of oil in her recipe. This curry is perfect to be served with plain parathas.
  • The Spicy Pear has a variety of vegetarian and non-vegetarian recipes. Tina’s saag recipe is a dish that brings back memories of my time in Kenya when friends used to cook this traditional dish in a clay pot over a charcoal fired stove. Tina has managed make this dish from ingredients found in her local shop. The main ingredient for saag is mustard greens but Tina used fresh greens and spinach with Brussels sprouts and kale to recreate the authentic flavours. This curry is perfect to be served with maki ki roti (rotis made from corn flour.)
  • Slice Of Me has the perfect recipe for masoorachi aamti or red lentil curry. This dal is known for its rich delicacy as it used to be prepared in royal households of the Moghul kings. (Manjiri’s style of writing reminded me of the saying in India – Yeh Mu aur Masoor di dal? Literal translation: This face – and you want masoor ki dal? This remark is made when someone asks for something more than they deserve). Manjiri uses all the authentic spices used in this Maharastrian style of cooking but at the same time gives tips of where to get the ready blended spices from. This is a perfect dish to serve with plain rice and chapattis.
  •  Lavender and Lovage has an amazing blog with very creative recipes. Karen’s recipe for potato & kale curry with coconut milk and Brita filtered water made me realise that I never think to list water as an ingredient. This potato and kale curry is quick and easy to make. It’s a perfect dish to serve with hot rotis.
  • Recipes From A Pantry has a really unusual recipe for wild garlic and chickpea curry. Bintu describes how to identify and pick the wild garlic whilst on your walks. I intend to look out for wild garlic on my walks from now onwards. This aromatic curry goes great with any kind of stuffed parathas.
  • Tinned Tomatoes’ recipe for chickpea curry is very similar to the way I cook chickpeas. Jacqueline uses lots of tomatoes, lemon and brown sugar to give it a lovely sweet and sour taste.   This makes the curry full of flavour and perfect to serve with naan bread. This is one curry everyone should learn to cook and enjoy.
  • Deena Kakaya’s recipe for roasted tomato, basil and paneer curry is one I must try this weekend as we love paneer. Deena’s recipe suggests roasting the tomatoes with some garlic in the oven which gives the curry a rich and amazing colour and taste. This delicious curry can be served perfectly with plain basmati rice.
  • Simply Food always has the most amazing recipes. This is one of the first blogs I started to follow and having met Nayna several times, I have found a friend for life. I love looking at both of Nayna’s blogs for everyday cooking ideas as her tastes are very similar to mine. Nayna’s recipe for broccoli and potato curry is delicious as well as quick to make using everyday ingredients. This curry tastes great with parathas.
  • The Curry Guy always has a range of Indian curries on his blog. Dan’s blog has lots of amazing recipes where he uses all authentic and often home blended spices so I always love trying out his vegetarian dishes. This quorn balti with mushrooms and peas recipe is a favourite with my son and his friends. We always serve such curries with noodles or pasta. Try it and see how great the combination is.
  • Cooksister is a blog I have come across recently. I like Jeanne’s blog as she always includes little anecdotes from her life in her blog posts. Her recipe for creamy chickpea, spinach and zucchini curry looks delicious. This is the kind of comfort food I love eating with rice.
