Love is in the air! Valentine’s Day is fast approaching and there are lots of romantics out there, sharing recipes that are perfect for a cosy night in with the one you love. What’s your ultimate romantic recipe? Here’s our favourite starter dish for Valentine’s Day – seared scallops with bacon. Of course, you could serve it with some crusty bread or creamy mash if you want to turn it into a main dish.
ingredients:
60g of bacon
6 scallops, shelled and trimmed
A knob of unsalted butter
75 ml semi-skimmed milk
olive oil
a few sprigs of fresh sage
½ a lemon
method:
1. Roughly chop the bacon
2. Score the scallops with crosses on one side and season with a pinch of sea salt.
3. Heat some live oil in a frying pan and add the bacon. Fry it for two minutes,
4. Add the sage leaves to the frying pan and cook for a minute.
5. Add the butter and the scallops, cut-side down, to the pan. Cook for around two and a half minutes, or until golden, turning them half way and squeezing lemon juice onto them in the last 30 seconds of cooking.
