Twenty one-pot springtime meals


Ciara who blogs at My Fussy Eater has written a lovely round up of one-pot springtime meals. Ciara is mum to two fussy eating children and wife to a fussy eating husband! After spending all of her second pregnancy eating white bread and pasta, she decided to overhaul the family’s diet last year, ditching processed and sugar laden food for more natural and whole food.

It’s that time of year again where the days are getting longer and the haze of Winter is finally lifting. Springtime is here, yay! Heavy roasts and stews are a staple during the cold months, but as the days start warming up I look forward to using light and fresh seasonal ingredients in my meals. And of course with all that extra daylight to enjoy outdoors the last thing we want to do is to spend hours stuck in the kitchen preparing food. One pot meals are an absolute favourite of mine. Quick and easy to prepare and with little washing up. What’s not to love!
